This from our dear friend, Teri:
I bunch fresh spinach, chopped; or 1 box frozen spinach (thawed & squeezed dry)
1/2 onion, diced
olive oil
1/2 C milk
1 “puck” JFF goat cheese, flavor of choice, at room temperature
3 eggs
1 uncooked pie crust
Sautee spinach and onions in drizzle of olive oil until onions are soft and spinach is wilted; scrape mixture into empty pie crust.
Warm milk for 30 seconds in microwave, then whisk in goat cheese until smooth. Whisk in eggs. Pour entire mixture over spinach at bake at 350F til done, about 30 minutes.
Teri says this is also very good with artichoke hearts. We enjoyed it with some grated potato (squeeze excess liquid from potato after grating), green peppers, and cherry tomatoes. Mushrooms or ham would be great, too. It’s a nice, quick dinner recipe for any night of the week!
